Fresh Fruit Cake
Fresh Fruit Cake is an moderately easy dinner. Made with 2 oranges (including rind), seeded and cut into quarters, 2 ripe bananas, peeled and cut into pieces, 2 apples, cored and cut into quarters, 2 eggs and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Purée the oranges in a blender or food processor until the rind is finely chopped.
Reserve.
Mash the bananas; dice the apples into small pieces.
Beat eggs in a large bowl.
Gradually beat in sugar until mixture is thick and pale.
Beat in melted butter or margarine, then fold in oranges and bananas.
In a second bowl, stir together flour, baking powder and soda.
Beat into the fruit mixture, then stir in the apples, raisins and walnuts.
Pour batter into greased and floured loaf pans.
Bake in a 350° oven for 1 hour, or until it tests done with a toothpick. If desired, garnish with cherries.
