Fresh Creamed Corn is an easy dinner. Made with 10 to 12 ears fresh corn, 1/4 to 1/2 lb. streak of lean, sliced, salt and pepper to taste and 1 c. evaporated milk (more or less as needed), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut and scrape the corn off cobs.

Using large frypan or electric skillet, fry streak of lean until crisp.

Remove from pan. Add corn, salt and pepper to same pan.

Cook on medium heat for a few minutes, stirring constantly.

Add milk and continue cooking on low heat until done.

Continue to stir every few minutes.

Cooking time is approximately 30 minutes.
