With a sharp knife, cut kernels from corn.

With back of a knife, scrape cobs to release milky pulp.

Make at least 2 cups. In a large bowl, stir together flour, sugar, baking powder, salt and pepper.

In a small bowl, beat together eggs, milk and cooking oil.

Add to flour mixture, stirring only until flour is moistened.

Stir in corn.

Cook in hot oil, 2 tablespoons batter for each pancake.

Makes 24 pancakes.

Serve with maple syrup.
