Fresh Corn Casserole
Fresh Corn Casserole is an moderately easy dinner. Made with 3 or 4 slices bacon, fried, drained and crumbled, 2 c. fresh corn, cut off (about 4 ears), 1/2 c. green pepper, chopped, 1/4 c. onion, chopped and 1 large tomato, peeled and chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Reserve 1 Tbsp. bacon drippings in skillet.
Add corn, green pepper and onion.
Cook over high heat 5 minutes, stirring often. Stir in bacon, tomatoes and seasonings.
Spoon into greased, shallow baking dish.
Bake at 350Β° for 10 to 15 minutes.
Makes 4 servings.
