Fresh Coconut Pie
Fresh Coconut Pie is an moderately easy dinner. Made with 2 tbsp. soft butter or margarine, 1 1/2 c. shredded fresh coconut, 3 eggs, 3/4 c. sugar and 1 tbsp. lemon or lime juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Spread butter (softened) in bottom of pie plate. Sprinkle 1 1/2 cups coconut. Press in firmly and chill until firm.
Put eggs, sugar, juice, cheese and 1 cup coconut in blender. Blend well and pour into prepared pie plate. Bake at 350Β° for 25 to 30 minutes.
