Fresh Coconut Cake
Fresh Coconut Cake is an moderately easy dinner. Made with 2 c. sugar, 1 stick margarine, 1/2 c. vegetable oil, 5 egg yolks and 5 egg whites, stiffly beaten, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Drain 2 coconuts.
Peel and grind coconut.
Cream sugar, margarine and oil.
Beat yolks and add to mixture.
Combine flour, salt and soda; add to first mixture alternately with coconut milk. Stir in flavorings.
Fold in beaten egg whites. Pour in 3 well-greased 8-inch pans.
Bake at 25 minutes at 350Β°.
Frost and cover with fresh coconut (use 7 Minute Frosting).
