Fresh Blueberry Pie
Fresh Blueberry Pie is an moderately easy dinner. Made with 1 (9-inch) baked pie shell, 5 c. fresh blueberries, 1 c. sugar, 8 tbsp. cornstarch and 1 tsp. grated lemon rind, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Bring berries (1 cup), 3/4 cup sugar and lemon rind to boil in saucepan.
Combine remaining sugar (1/4 cup) and 1/4 cup water with cornstarch.
Stir into boiling berries.
Cook about 1 minute, until thickened.
Cool to room temperature.
Pour in other 4 cups berries, stir to coat.
Pour in baked pie shell.
Chill until completely set.
Decorate with whipped cream or Cool Whip and a few berries.
