Fresh Blackberry Cobbler
Fresh Blackberry Cobbler is an moderately easy dinner. Made with 10 tbsp. unsalted butter, cut in 10 pieces (room temperature), 1 c. sugar, 1 c. flour, 2 tsp. baking powder and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix 8 tablespoons of butter and 1/2 cup sugar until light and fluffy.
Add flour, baking powder, salt and milk.
Batter will be stiff.
In a large bowl, gently toss berries with remaining sugar, cornstarch and lemon juice.
Pour into buttered 11 x 7-inch baking dish.
Dot with remaining butter. Spoon batter over top of berries, covering them as much as possible.
Bake at 350Β° for 40 minutes or until pastry is light brown.
Serve with ice cream.
