Fresh Apple Cake
Fresh Apple Cake is an moderately easy dinner. Made with 1 1/2 c. wesson oil, 2 c. sugar, 2 whole eggs, 3 c. fresh apples, chopped and 1 c. pecans, chopped (optional), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix oil and sugar. Add eggs and beat.
Add apples and mix well. Sift flour with soda, cinnamon and salt.
Add to the apple mixture.
Add vanilla, pecans and coconut.
Pour batter into a loaf pan. Bake at 300Β° for 1 hour and 20 minutes. This is a nice Christmas cake; takes the place of fruit cake, not as rich.
