Fresh Apple Cake
Fresh Apple Cake is an moderately easy dinner. Made with 4 c. apples, chopped (i prefer jonathan's), 2 c. sugar, 3 eggs, 1 c. english walnuts (leave in fairly large pieces) and 3/4 c. oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream eggs and sugar until creamy.
Add oil and blend well. Sift all dry ingredients together and add to sugar mixture.
This batter will be thick.
Fold in chopped apples and then add vanilla.
Sprinkle butterscotch chips on top.
Bake in greased and floured 9 x 13-inch baking pan.
Bake at 350Β° for 50 to 55 minutes or until done.
No frosting is necessary.
If you prefer, serve cake warm with whipped cream.
