Fresh Apple Cake
Fresh Apple Cake is an moderately easy dinner. Made with 4 c. cooking apples, chopped (tart apples), 1 c. raisins, 1 c. nuts, chopped, 1/2 tsp. salt and 1 c. cooking oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix cooking apples, raisins, nuts and sugar; let stand 1 hour. Stir often.
Mix together flour, nutmeg, cinnamon, salt and soda. After one hour, mix and beat well cooking oil, vanilla and 2 eggs. Add this to apple mixture, then add sifted ingredients to apple mixture.
Beat by hand until well moistened.
Grease and flour 3 loaf pans.
Fill about half full or divide mixture evenly.
Bake at 350Β° for 1 hour 15 minutes.
Test with toothpick.
