Fresh Apple Cake
Fresh Apple Cake is an moderately easy dinner. Made with 1 1/2 c. oil, 2 c. sugar, 3 eggs, 1 tsp. vanilla and 3 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine oil, sugar, eggs and vanilla in large mixing bowl. Sift flour, salt, baking soda and cinnamon and stir into oil/egg mixture.
(Batter will be very stiff).
Add apples and walnuts and mix.
Bake at 350Β°.
A tube pan takes 1 1/4 hours; or makes 5 small loaf pans, baked for about 30 minutes.
Similar to fruit cake. Tastes best after it's been frozen or wrapped in foil or plastic wrap for a few days.
