Freezer Pickles
Freezer Pickles is an moderately easy dinner. Made with 8 c. sliced cucumbers, 2 medium onions, 2 tbsp. pickling salt, 1 1/2 c. sugar and 1 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Scrub and slice cucumbers.
Peel and thinly slice onions. Sprinkle with salt.
Mix well.
Cover bowl and let stand 3 hours. Rinse vegetables with cold water and drain thoroughly.
Mix sugar, vinegar and celery seed.
Pour brine over veggies.
Mix and cover. Refrigerate overnight.
Pack in straight-sided containers.
Cover with brine.
Leave 1-inch headspace.
Seal and freeze.
Defrost 8 hours.
