Four C. Salad is an moderately easy dinner. Made with 2 skinless, boneless chicken breasts (approximately 1 1/4 lb.), 3 tbsp. mayonnaise, 1/2 c. celery, diced, juice of 1 lemon and about 1 tbsp. soy sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Poach chicken breasts.
Cut into bite sized pieces.
Mix mayonnaise, lemon juice, soy sauce and curry powder.
Add chicken and celery, chill.
Just before serving, add cashews and more dressing ingredients to suit taste and consistency.
Serve on lettuce.
