Butter bottom (not sides) of an angel food cake pan.

Set oven to 450Β°.

In large mixing bowl, whip egg whites, salt and cream of tartar until frothy.

Add 2 tablespoons of sugar at a time, beating well after each.

Add extracts.

Beat until glossy and forms stiff peaks.

Spread in pan.

Turn off oven and put pan in oven overnight.

Next day, carefully remove from pan.

Run knife around edge of the pan.

Refrigerate.

When ready to serve, add whipped cream or Cool Whip and serve with strawberries or fruit in season.

This is custard-like.
