Fluffy Pineapple Pie
Fluffy Pineapple Pie is an moderately easy dinner. Made with 4 tbsp. sugar, 3 tbsp. flour, dash of salt, 2/3 c. pineapple juice and 1 (no. 2) can crushed pineapple, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix sugar, flour and salt; add pineapple juice.
Blend well. Cook over low heat until thick.
Add a small amount of hot mixture beaten into remaining hot mixture, thick.
Add marshmallows.
Well, until melted.
Add well drained pineapple and chill 1 hour. Fold in 1/2 of whipped cream and pour into baked pastry shell. Top with remaining whip cream.
Chill at least 1 hour before serving.
Best if longer.
