Scrub the 4 potatoes, dry and coat with oil or fat.
Bake at 350Β° for 1 hour and 30 minutes.
Halve lengthwise.

Beat sour cream and butter with potatoes until fluffy; season.
Stir in onions and parsley; stuff shells.
