Fluffy Apricot Salad is an easy dinner. Made with 2 (3 oz.) pkg. or 1 (6 oz.) pkg. apricot jell-o, 1 (15 oz.) can crushed pineapple, 1 (24 oz.) carton light 'n lively cottage cheese, 1 (29 oz.) can sliced peaches, drained and 1 (12 oz.) frozen cool whip, this recipe delivers authentic, satisfying flavors. Combine crushed pineapple (do not drain) and jello in a saucepan.
Bring to a boil.
Cook for 2 1/2 minutes, stirring constantly.
In a large mixing bowl, combine the mixture, cottage cheese, peaches (drained and cut into small pieces) and the Cool Whip.
Refrigerate until firm.
Can add nuts, if desired.
