Florida Cheesecake
Florida Cheesecake is an moderately easy dinner. Made with 3 c. creamed cottage cheese, 1 c. pure maple syrup, 1 c. plain yogurt, 6 tbsp. fresh lime juice and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine syrup, yogurt, eggs and gelatin in top of double boiler.
Stir constantly over medium heat until gelatin is dissolved.
Using a blender or rotary beater, blend cottage cheese with lime juice until smooth.
Combine cheese with gelatin mixture and blend well.
Fold in the whipping cream.
Pour into greased spring-form pan, which has been buttered and dusted with graham crumbs.
Chill until set.
