Fish Whirls

Make fillets into rolls; season and add a squeeze of lemon juice.
Put onto deep pan with 1 ounce butter and little milk. Bake about 20 minutes, until just tender.
Fill rolls with shrimp half-way through the cooking.
Remove fish to hot serving dish. Keep hot.
Heat rest of butter.
Stir in flour and cook a few minutes.
Strain liquid from cooking fish.
Add to the "roux" with remaining milk.
Bring to a boil.
Cook until thickened; season well and stir in cream.
Pour around fish.
Garnish with chopped parsley.
