Made with 6 strips bacon, cooked, drained and crumbled (reserve grease), 2 c. onion, chopped, 4 c. potatoes, finely diced, 1 1/3 c. carrots, finely diced and 2 (16 oz. size) flounder fillets, this recipe delivers authentic, satisfying flavors. Fry bacon in large (stock) pot until crisp; drain and crumble. In the reserved bacon grease, saute the chopped onion, potatoes and carrots until tender, about 6 minutes.

Move the veggies over to one side.

Add the flounder and water; bring to a boil, then reduce heat.

Cover; simmer for 15 minutes, or until fish flakes with a fork.

Turn over and break up fish.
