Firecracker Enchilada Casserole
Firecracker Enchilada Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 large onion, chopped, 2 tbsp. chili powder, 1 tsp. salt and 1 (15 oz.) can ranch style beans, drained or pinto beans, this recipe delivers authentic, satisfying flavors. Brown beef with chopped onion.
Pour off excess grease.
Add chili powder and salt.
Stir well.
Simmer on low heat for 10 minutes.
Spoon into 9 x 13 x 2-inch casserole.
Layer beans, cheese and tortillas over meat.
Pour tomato liquid over cheeses. Chop tomatoes and chilies; spread over cheese.
Spoon soup evenly over top.
Cover and refrigerate overnight.
Following day, bake, uncovered, for one hour at 350Β°.
