Fiesta Pasta
Fiesta Pasta is an moderately easy dinner. Made with 8 oz. linguine pasta, 2 tbsp. olive oil, 1 large zucchini, diced, 1 medium onion, sliced thin and 1/4 c. chopped jalapeños, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Prepare pasta according to package directions and set aside. In 12-inch skillet, heat oil over medium heat and saute zucchini, onion, peppers and garlic for 5 minutes or until vegetables are tender-crisp, stirring occasionally.
Add tomatoes, oregano and salt and heat to a boil.
Reduce heat to low and simmer, uncovered, for 10 minutes, stirring frequently until the mixture thickens.
Serve tossed with pasta.
Sprinkle with Parmesan cheese.
Makes 4 side dish servings.
For less spice, use hot cherry peppers.
