Festive Potato Salad is an impressive dinner. Made with 3 c. potatoes, 3 tbsp. oil, 1 tbsp. red wine vinegar, salt and pepper and 1/2 c. black olives, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil potatoes in jackets.
Dice potatoes.
Pour oil over potatoes.
Add vinegar, salt, pepper, sliced olives, diced pickles, shredded carrots, pimentos (diced), finely chopped green pepper, grated onions and grated cabbage; mix well.
Add mustard and mayonnaise.
Mix well.
Serve cold.
