Fatias de Tomar are Portuguese convent sweets made from airy egg sponge sliced thick and soaked in lemon-cinnamon sugar syrup until glossy, tender, and richly golden.

Beat egg yolks and whole eggs until very pale, thick, and expanded.
Pour into a buttered mold and steam or bake gently until the sponge is set.
Cool the sponge, unmold it, and cut it into thick slices.

Soak the slices in warm syrup and serve with almonds and extra syrup spooned over.
