Fast And Easy Mexican Casserole is an moderately easy dinner. Made with 1 frozen pkg. of pre-cooked chicken cubes (no seasoning), 1 c. chopped onion (can get in frozen section), 1 can regular rotel, 2 cans cream of mushroom/chicken soup and 1 1/2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Spray large casserole dish with pam.
Cover bottom with chips and crush with hand.
(about 1 in. thick) In a large pot on stove put water, onion, soup and rotel.
Microwave chicken until defrosted and place in pot (with juice).
Cook on med. for 5 min. Pour mixture over chips and top with cheese.
Bake at 400 for 15 min.
Serve with refried beans and Spanish rice.
Serves 4-6.
