Evelyn's Fruit Cake
Evelyn'S Fruit Cake is an moderately easy dinner. Made with 1 1/2 c. sifted flour, 1 tsp. baking powder, 1 tsp. salt, 5 1/2 c. pecan halves and 6 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Grease large loaf pans.
Line with foil and grease again. Sift flour, sugar, baking powder and salt in large mixing bowl, adding fruit and pecans.
Mix well.
Beat eggs and rum.
Pour over mixture.
Pour into loaf pans.
Bake in 300Β° oven for 1 3/4 hours. Cool in loaf pan 15 minutes.
Brush top with corn syrup while warm.
