Esperregado is an easy dinner. Made with 2 bunches spinach or turnip greens, 1/2 c. water, 1 tbsp. butter, 1/2 tbsp. flour and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash and chop greens.
Bring water and a pinch of salt to boil.
Add greens and cook until tender.
Drain and squeeze all the water out.
In a frying pan melt butter.
Add flour, salt and pepper.
Stir; add greens and mix well for about 1 minute.
Serve hot with meat or fish dishes.
