English Muffin Pizza
English Muffin Pizza is an moderately easy dinner. Made with 2 english muffins, halved, 20 slices of pepperoni, 1 c. shredded monterey jack cheese, 2 tsp. italian salad dressing and 1 medium ripe tomato, sliced in four, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Toast each english muffin half.
Lightly spread with butter. Place two paper towels atop two coupled paper plates.
Separate pepperoni and place atop paper towels.
Microwave on High for 20-30 seconds (do not blacken).
Remove from microwave and dab off excess oil with paper towel.
Spread 1/2 tsp. salad dressing on each muffin half.
Place 1 slice tomato and 5 slices of pepperoni on each muffin half.
Top each with 1/4 c. of cheese.
Place muffins on non stick cookie sheet.
Broil on high for 5 minutes or until browned (no more than 8 minutes).
Cool 1 minute.
Serve.
