Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 1 large can enchilada sauce, 2 c. jack and cheddar cheese, oil and 12 corn tortillas, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown ground beef and add seasoned salt and pepper and chopped onion.
Drain off fat and set aside.
Heat enchilada sauce in saucepan and set aside.
Heat about 2 inches of oil in another saucepan and dip tortilla into oil, enough to soften.
Drain on paper towel and place on a plate.
Fill tortilla with ground beef, onion and cheese; roll up and place in 13 x 9 x 2-inch baking pan. Continue to fill, roll up and place filled tortillas into pan until full.
Then pour remaining sauce over all and sprinkle cheese.
Top with diced olives and bake in 350Β° oven for 20 minutes.
