Enchiladas
Enchiladas is an easy dinner. Made with 1 doz. tortillas, 2 cans enchilada sauce, 1 lb. ground beef (chicken or turkey), 1 lb. monterey jack cheese, grated and 1 lb. cheddar cheese, grated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat until well done.
Drain off any fat.
Add 2 cans enchilada sauce and a little water from each can (rinse them out). Heat tortillas in microwave until soft.
Spoon meat/sauce mixture in center of each tortilla.
Sprinkle with both cheeses.
Roll up and place edge side down in a 9 x 13-inch baking pan.
The pan should hold 8 to 10 rolled enchiladas.
Spoon remaining sauce over enchiladas and sprinkle with remaining cheeses.
Bake at 325Β° until bubbly, about 30 minutes.
