Enchiladas
Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 1 clove minced garlic, 1 tsp. salt, 1/2 c. chopped onion and 1/2 lb. grated mild cheddar cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Brown ground beef, garlic, salt and onion; drain grease.
Add cheeses; heat until melted.
Add sour cream, mushrooms and olives; set aside.
Soften corn tortillas in hot oil; drain.
Fill each tortilla with meat mixture; roll tightly.
Place seam side down on foil lined cookie sheet (spray foil with cooking spray or oil). Top with slice of Mozzarella cheese.
Sprinkle with parsley flakes. Cover with foil (also sprayed).
Bake at 350Β° for 10 to 20 minutes (until cheese on top melts).
Serve with salsa or picante sauce.
