Eileen's Fruit Cake
Eileen'S Fruit Cake is an impressive dinner. Made with 1/2 lb. butter (not margarine), 1/2 dozen eggs, 1 qt. pecans, 1 lb. candied pineapple and 1 lb. candied cherries, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream butter and sugar, add eggs (1 at a time).
Add pineapple juice and flavorings.
Mix well.
Add half flour ingredients.
Mix other half flour with chopped fruits and nuts. Mix all together.
Pour into greased and foiled tube pan (grease pan then line with foil) and grease again.
Bake at 275Β° for 3-4 hours.
