Eggs Fantastic
Eggs Fantastic is an moderately easy dinner. Made with 1 (12 oz.) pkg. regular jimmy dean sausage, 1/4 lb. fresh mushrooms, sliced, 1 medium onion, chopped, salt and pepper to taste and 6 eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute crumbled sausage, mushrooms and onion with salt and pepper.
Drain very well on paper towels.
Combine eggs and sour cream in blender and blend for 1 minute.
Pour eggs in a greased 7 1/2 x 11-inch baking dish.
Bake at 400° for 8 to 10 minutes, until set in the middle.
Spoon hot sauce over eggs and add sausage mix, then layer the 3 cheeses, beginning with the Velveeta.
Casserole may be refrigerated or frozen at this point and baked later.
Bake, uncovered, at 300° for 45 minutes.
Remove from oven and let set 5 to 10 minutes before cutting and serving.
