Eggplant Supreme
Eggplant Supreme is an moderately easy dinner. Made with 1 eggplant, peeled and cubed in about 1/2-inch cubes, 2/3 c. chopped celery, 1 onion, chopped, 1 small green pepper, chopped and 1/2 c. oleo, melted, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Boil the eggplant until tender. Drain well. Saute celery, onion and green pepper in oleo.
Put eggplant and celery mixture into 1 1/2-quart casserole and add other ingredients; mix well. Bake at 350Β° until browned.
May be made a day ahead or frozen for future use.
