Eggplant Supreme
Eggplant Supreme is an impressive dinner you can prepare in just 46 minutes. Made with eggplant, peeled and cubed in about 1/2-inch cubes, c. chopped celery, onion, chopped, small green pepper, chopped and c. oleo, melted, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Boil the eggplant until tender. Drain well. Saute celery, onion and green pepper in oleo.
Put eggplant and celery mixture into 1 1/2-quart casserole and add other ingredients; mix well. Bake at 350Β° until browned.
May be made a day ahead or frozen for future use.
