Eggplant Parmesan is an easy dinner. Made with 2 eggplant (3 lb.), 4 1/2 c. breading meal, spaghetti sauce and lessarella cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut ends off eggplant.
Slice in 1/2-inch circles.
Dip in water and coat with BREADING MEAL.
Bake on sprayed cookie sheet at 350°
15 minutes, turn and bake 15 minutes more. Layer in pan cheese and bake at 350° for 30 minutes or serve sliced eggplant sauce and cheese as toppings. Serves 4 to 6.
