Eggplant Parmesan
Eggplant Parmesan is an easy dinner. Made with 1 or 2 medium size eggplants, 1/2 c. oil (you may have to add more oil when frying), romano cheese and mozzarella cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and slice eggplants; flour first, then dip into egg batter, then dip them in bread crumbs.
Heat oil; fry eggplants on both sides.
Remove from pan and place them on absorbent paper toweling.
(This is to remove the excess oil.)
