Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium or large eggplant, salt and pepper, 1 small onion, diced, 2 tbsp. butter and 3/4 c. milk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Pare and slice eggplant. Cook in salted water until tender. Drain and mash.
Add other ingredients except cheese slices. Place in a greased 1-quart casserole dish.
Bake at 350Β° for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
Yields 4 servings.
