Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 lb. hamburger, chopped, 1 round onion, chopped, 1 round eggplant, 1 tsp. salt and dash of oregano, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Peel the eggplant and cut into 1/4-inch slices.
Soak in water for about 10 minutes.
Remove from water.
Pat dry and fry lightly. Grease a casserole dish and layer the following ingredients in the dish: eggplant, browned hamburger, chopped onion, salt, pepper, oregano and tomato soup.
Bake at 350Β° for 1/2 hour with a cover and for 1/2 hour without a cover.
