Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 eggplant, 2/3 c. milk, 1 3/4 c. crushed crackers, 1 1/2 c. grated cheese and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook and drain eggplant. Beat eggs and milk together.
Add eggplant, onion, salt, pepper and soup.
Mix this with half of the crackers, margarine and cheese.
Cook about 30 minutes at 350Β°. Add cheese and rest of crackers coated with margarine.
Cook until brown.
