Pare eggplant and cut into 1/2-inch slices.

Cook in boiling water with 1/2 teaspoon salt until tender (about 15 minutes). Drain well.

Mash the eggplant into small pieces.

Add onion and bell pepper.

Stir gently.

Add eggs, milk, bread crumbs, cheese, salt and pepper.

Spoon into 1 1/2-quart greased casserole dish. Combine margarine and cracker crumbs.

Sprinkle over top.

Bake at 350Β° for 30 to 40 minutes.
