Eggplant Bake
Eggplant Bake is an moderately easy dinner. Made with 1/2 c. bread crumbs (fine, dry), 1 tsp. dry oregano leaves, 1/2 tsp. garlic salt, 1 1/2 lb. eggplant, cut in 1/2-inch slices and 1/2 c. butter, melted, this recipe delivers authentic, satisfying flavors. Heat oven to 400Β°.
Mix crumbs, oregano and garlic salt.
Dip eggplant slices in butter, then in crumb mixture.
Place in single layer in greased jelly roll pan, 15 1/2 x 10 1/2 x 1-inch. Spread evenly with tomato sauce.
Sprinkle with cheese.
Bake until tender, 20 to 30 minutes.
Serves 4 to 6.
