Eggplant and Seafood Casserole
Eggplant And Seafood Casserole is an moderately easy dinner. Made with 2 medium eggplant, 1/2 c. chopped onion, 1/2 c. chopped celery, 2 garlic cloves, minced and 2 hamburger buns, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Peel eggplant; chop in medium pieces.
Add onion, margarine and garlic.
Place mixture in heavy pot.
Smother mixture until done. Place buns and beaten eggs in bowl until soaked, then add to eggplant mixture and add crab meat, shrimp, green onions, parsley and seasoning.
Mix well.
Place in 1 to 1 1/2-quart casserole dish.
Sprinkle plain bread crumbs.
Bake at 350Β° for 15 to 20 minutes.
