Easy Potato Rolls
Easy Potato Rolls is an moderately easy dinner. Made with 2/3 c. sugar, 2/3 c. crisco, 1 c. mashed potatoes (no milk or butter), 2 1/2 tsp. salt and 2 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a small bowl, cream sugar and Crisco, add potatoes, salt and eggs.
Beat in yeast, 2 cups flour and remaining water.
Add enough remaining flour to form a soft dough.
Form into a ball, place in a large greased bowl and grease top of dough.
Cover and let rise until double, about 1 hour.
Punch dough down.
Pinch off small pieces to form 1 inch balls.
Place 3 in each greased muffin cups.
Cover and let rise until double.
Bake at 375Β° for 20 to 25 minutes then brush with melted butter.
Remove from pans to wire racks to cool.
Makes about 36 to 45.
