Easy Garlic Chicken
Easy Garlic Chicken is an moderately easy dinner. Made with 1 whole roasting chicken (about 3 lb.), salt and pepper to taste, 12 cloves garlic, peeled, 1 medium onion, quartered and 1/2 c. fresh parsley, snipped, this recipe delivers authentic, satisfying flavors. Wash chicken and pat dry.
Rub with salt and pepper.
Cut one clove of garlic in half and rub over chicken.
Place remaining garlic, onion quarters, parsley and thyme in chicken cavity. Place in roasting pan.
Place vinegar and apple juice in pan with chicken, using liquid for basting.
Roast at 425° for 20 minutes. Baste once with juices.
Reduce oven to 350° and roast at least 1 more hour, basting often.
