Earthquake Cake
Earthquake Cake is an moderately easy dinner. Made with 1 c coconut, 1 chopped pecans, 1 box german or swiss chocolate cake mix, 1 8 oz pkg cream cheese, softened and 1 stick margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix well the coconut and pecans and spread in bottom of 9 x 13 inch pan that has been greased or sprayed with Pam.
Prepare cake mix according to directions on box. Spread over coconut/pecan mixture.
Mix cream cheese, margarine and powdered sugar.
Pour or spoon over cake mix. Bake in 350 degree oven for 30-45 minutes. Cake may spill over sides of pan while baking.
This cake is not pretty, but it makes up for looks in the taste.
