Doves in Wine

In cold water; drain well.
Pat dry. Split down middle.
Mix together flour, salt, pepper, paprika and basil.
Dredge doves in flour mixture.
Put melted butter and garlic in heavy
Dutch oven or skillet, covered. Brown doves over medium-high bouillon and wine over doves, cover.
Simmer, stirring frequently, for about an hour. Add mushrooms orange juice; simmer
6 minutes longer. Thicken pan juice with a little flour.
Serve hot.
