Double Baked Potatoes
Double Baked Potatoes is an moderately easy dinner. Made with 4 large potatoes, 6 slices of bacon, 1/3 c. onion, 8 ounces of sour cream and 3/4 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Fry bacon until crisp.
Bake potatoes until tender; let cool. Scoop out pulp leaving about 1/4-inch in shell.
Mash pulp in large mixing bowl with crumbled bacon and remaining ingredients; mix well.
Put back into shells and sprinkle with paprika.
Microwave for 5 minutes until heated through and serve.
(These can be done in the morning and then re-heated.)
