Mix the first 3 ingredients thoroughly and boil until mixture spins a long thread (234°).

Take out 1 cup and gradually pour over beaten egg whites.

When rest of syrup cracks when dropped in cold water-test (270°), take from heat and pour slowly over first part, mixing constantly.

Add vanilla and nuts if desired.
